Serves 10 servings

Ingredients for the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

To prepare the Citrus Syrup: Place every ingredients into a pot, bring to a gentle boil, stirring to dissolve. Next, take off the burner allowing it to reach room temperature completely. Decant to a clean bottle, seal and refrigerate it chilled, it will last for about four weeks.

For the Batch Mix: Pour all the liquid ingredients into a sizeable container, leave to sit for 60 minutes, then strain best through muslin, making it perfectly clear.

To serve: Measure 85ml of the cocktail base into your mixing glass containing ice, and agitate lightly for a minute to chill. Strain to a chilled martini glass or similar, garnish with a few cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
